Egg Bake

4 whole eggs, lightly beaten

1 container (16 oz) 100% egg whites egg beaters

1 container (24 oz) 2% cottage cheese

1 bell pepper, chopped

8 cremini mushrooms, chopped

6 morel mushrooms, chopped

4 oz mozzarella (1/2 block), shredded

2 oz (1/2 block) parmesan, shredded

1 tsp cayenne pepper

1 tsp ground black pepper

1/8 tsp salt

Preheat oven 350F. Grease 9x13 baking dish with olive oil spray.

Add all of the ingredients in a large bowl. Stir to combine. Pour into baking dish.

Bake for 40 minutes.

Makes 6 servings.

What I love about this high protein meal is that you can change up the vegetables or cheese any way you like (use jalapenos, onion, different mushrooms, or use cheddar or feta). Adding bacon, pancetta or ham would also be tasty. I really don’t think I have made this exactly the same way twice and that helps prevent the dish from becoming boring.
