Breakfast Burritos
This classic can be as unique as it is easy. Scramble up some eggs alone or add in leftover shredded chicken, ground beef or sausage. Add in your favorites like tomatoes, spinach, onions, potatoes, mushrooms. Use up that pico de gallo, black beans and avocado from taco night. Or go a different route entirely and add in some ham and pineapple.
Want to increase your protein? Add some egg whites.
Want to increase your fiber? Add beans and avocado slices

You can even prep ahead! Wrap each burrito in tin foil and then place an airtight container (like a freezer ziplock), then freeze for up to 3 months. Reheating in the oven for best results, but the microwave for approx 2 minutes (flip half way) can be a game changer in the morning.
