Joe’s army Salad

1/2 pound bacon (half pack), cut into 1/2 inch pieces

6 large beefsteak tomatoes, chopped

1 large sweet onion, chopped

1/4 C fresh parsley, finely diced

1 C mayonnaise

1/2 C table cream (half of a 7.6 oz can)

1 tsp ground black pepper

1/2 tsp salt

Cook bacon till desired crispiness. Transfer to paper towel covered plate to cool. I find that it is easier to cut the bacon into 1/2 inch pieces prior to cooking rather than crumbling later, but either way works.

Combine tomato, onion and parsley in large bowl.

Combine mayo and cream in small bowl. Then incorporate into the large bowl.

Add salt, pepper and bacon. Best after chilling for at least an hour.

Makes 12 servings.

We find this chilled salad to be a delicious way to enjoy tomatoes and onion, especially during the summer. While this is a low protein and high fat side, I find the number of calories in a serving perfectly acceptable for a snack. Many things can have a macro shift by swapping out some of the mayo for plain greek yogurt, but I have not tried that in this recipe. For us the mayo flavor is satisfying and we will just add more lean protein at another time during the day to meet our goals.
