Joe’s Salmon Patties

1 can salmon, drained

2 garlic chives, thinly sliced (can use green onion)

1 Tbsp fresh dill, chopped

1/8 tsp paprika

1/2 C panko breadcrumbs

1/4 C mayonnaise

1 Tbsp Dijon mustard

1 egg, lightly beaten

pinch of celery salt and pepper to taste

2 Tbsp olive oil, may require more

Add all ingredients to large bowl. Stir till well incorporated. Form into patties.

Preheat skillet over medium heat with oil. Add patties in batches. Cook till golden and crispy, about 3-4 minutes per side. Remove to plate covered in paper towels to drain.

Makes about 5 patties.

Drizzle in homemade Yum Yum, tartar or Tzatziki sauce.

Basic Tartar sauce

1/4 C mayo, 1 Tbsp relish, 1/4 tsp tarragon

Tzatziki sauce

1/2 C finely grated cucumber (squeeze out excess moisture with towel), combine with 1 C plain greek yogurt (oikos pro 25g protein), 1 garlic clove grated, 1 Tbsp lemon juice, 1 Tbsp fresh chopped dill, 1/2 Tbsp olive oil, 1/4 tsp sea salt. Chill.

Yum Yum sauce

1 1/2 C plain greek yogurt (oikos pro 25g protein), 1/3 C Gochujang OR Sriracha hot sauce, 1/4 C rice vinegar, 1 Tbsp Dijon mustard, 2 Tbsp honey, 2 tsp toasted sesame oil, 1 tsp garlic powder, 1/4 tsp salt, 1/4 tsp white pepper
